Creamy Curry Yam Soup

yam Ingredients: 

  • 1 red onion, diced
  • 1 medium russet potato, pealed & diced
  • 3 medium yams, pealed & diced
  • 1 TBS chopped ginger
  • 2 TBS chopped garlic
  • 1 TBS curry powder
  • 1/2 tsp cumin powder
  • 1 tsp sea salt
  • 6 cups of Pacific veggie broth (or homemade veg stock)
  • 200 ml coconut milk (small can)

Preparation:

  1. Saute onions for about 5 mins
  2. Add garlic & saute another 2 mins
  3. Add ginger, & spices & mix in.
  4. Add diced potato & yams
  5. Cover with broth & simmer until veggies & soft.
  6. Blend in batches in you blender.
  7. Add your coconut milk.
